Turkey Taco Stuffed Sweet Potatoes (Printable Version)

02 - 4 cloves garlic, minced

12 - 1/2 teaspoon dried oregano

# Steps to Cook:

01 - Pierce sweet potatoes with a fork and microwave on high for 8 to 10 minutes until tender. Allow to cool.
02 - Cut sweet potatoes in half lengthwise and scoop out the flesh into a bowl. Mash the flesh with 1 teaspoon ground cumin, 1/4 teaspoon salt, and 1/4 teaspoon ground black pepper.
03 - In a skillet over medium heat, brown ground turkey until fully cooked. Add minced garlic, chili powder, dried oregano, paprika, remaining 1/4 teaspoon cumin, 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Stir in crushed tomatoes and cook for an additional minute.
04 - Fill the sweet potato skins with the turkey mixture. Top with grated pepper Jack cheese and broil for 30 seconds until the cheese melts.
