Southern Breakfast Enchiladas (Printable Version)

# Everything You’ll Need:

01 - 8 flour tortillas
02 - 1 lb pork sausage, cooked and crumbled
03 - 1 cup shredded cheddar cheese
04 - 6 large eggs, scrambled
05 - 2 cups cooked hash browns

→ Sausage Gravy

06 - 2 tbsp unsalted butter
07 - 2 tbsp all-purpose flour
08 - 2 cups whole milk
09 - Salt and freshly ground black pepper, to taste

# Steps to Cook:

01 - Fill each flour tortilla with cooked pork sausage, scrambled eggs, cooked hash browns, and shredded cheddar cheese. Roll tightly and arrange seam side down in a baking dish.
02 - In a medium saucepan, melt unsalted butter over medium heat. Whisk in all-purpose flour and cook for 1-2 minutes until lightly browned. Gradually whisk in whole milk, stirring constantly until the gravy thickens. Season with salt and pepper to taste.
03 - Pour the prepared sausage gravy evenly over the arranged enchiladas. Sprinkle additional cheddar cheese on top. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, until bubbly and golden.
04 - Remove from oven and serve warm. Optionally, spoon extra sausage gravy over individual portions.
