05 - 1 cup shredded pepper jack cheese
06 - 2 tablespoons chopped fresh chives

10 - 4 tablespoons unsalted butter
11 - 2 cloves garlic, minced
12 - 1 tablespoon chopped fresh parsley
13 - 1 teaspoon chopped fresh rosemary
14 - 1 teaspoon chopped fresh thyme

# Steps to Cook:

01 - Preheat grill to medium-high heat (400-425°F). Scrub potatoes, pierce with fork, coat with olive oil and salt, wrap each individually in aluminum foil. Grill for 45-60 minutes until tender when pierced with a skewer.
02 - In a small saucepan over medium heat, melt butter. Stir in minced garlic and chopped fresh herbs. Cook for 2-3 minutes until fragrant. Remove from heat and set aside.
03 - Toss beef medallions with olive oil, salt, and pepper. Heat a cast iron skillet over high heat until smoking. Sear beef cubes for 2-3 minutes per side until browned but still juicy. Remove from heat and keep warm.
04 - Carefully unwrap grilled potatoes, slice lengthwise. Mix sour cream, shredded pepper jack cheese, and chives, then spoon mixture into each potato. Top with seared beef bites and drizzle generously with garlic herb butter before serving.

# Extra Suggestions:

01 - Ensure the potatoes are thoroughly cooked by testing tenderness with a fork before removing from the grill.
