Chickpea Truffles Three Ingredients (Printable Version)

Fudgy, no-bake chickpea treats combined with nut butter and dark chocolate for an easy, wholesome delight.

# Everything You’ll Need:

→ Base

01 - 1 (13.5 oz) can chickpeas, drained and rinsed

→ Binder

02 - 1/2 cup almond or cashew butter

→ Coating

03 - 1 cup vegan dark chocolate chips, melted

# Steps to Cook:

01 - Drain and rinse chickpeas thoroughly. Melt the dark chocolate using a microwave or double boiler until smooth.
02 - Combine chickpeas, nut butter, and melted chocolate in a food processor. Blend until the mixture is smooth and homogenous.
03 - Using a cookie scoop, portion the mixture onto a parchment-lined baking sheet. Freeze for 15 to 20 minutes until firm.
04 - Roll each portion into smooth spheres by hand and return them to the freezer for an additional 10 minutes to firm up.
05 - Melt extra dark chocolate and coat each truffle evenly before placing back onto the parchment-lined sheet.
06 - Optional: sprinkle with desired toppings such as cacao nibs or shredded coconut. Freeze once more until completely set.
