Drain and rinse chickpeas thoroughly. Melt the dark chocolate using a microwave or double boiler until smooth.

Combine chickpeas, nut butter, and melted chocolate in a food processor. Blend until the mixture is smooth and homogenous.

Using a cookie scoop, portion the mixture onto a parchment-lined baking sheet. Freeze for 15 to 20 minutes until firm.

Roll each portion into smooth spheres by hand and return them to the freezer for an additional 10 minutes to firm up.

Melt extra dark chocolate and coat each truffle evenly before placing back onto the parchment-lined sheet.

Optional: sprinkle with desired toppings such as cacao nibs or shredded coconut. Freeze once more until completely set.
