Melt butter in a large skillet over medium heat. Add gnocchi and toast until lightly golden. Remove gnocchi and set aside.

In the same skillet, cook ground beef and diced onion until browned. Season with salt, pepper, cumin, smoked paprika, yellow mustard, and minced garlic. Stir to combine.

Add diced tomatoes with green chiles, beef broth, and toasted gnocchi to the skillet. Bring to a boil, then reduce heat and simmer for 5 to 7 minutes until gnocchi is fully cooked.

Remove skillet from heat. Stir in heavy cream and 3/4 cup shredded cheddar cheese until melted and creamy.

Sprinkle remaining cheese on top and broil in the oven until the cheese is golden brown and bubbly.
