12 - Cooking spray or additional melted butter for greasing the waffle iron

# Steps to Cook:

01 - Preheat the waffle iron according to the manufacturer’s instructions. Lightly grease with cooking spray or melted butter to prevent sticking.
02 - In a large bowl, whisk together cornmeal, all-purpose flour, baking powder, baking soda, and salt until evenly blended.
03 - In a separate bowl, whisk buttermilk, melted butter, eggs, and honey (if using) until smooth and fully combined.
04 - Pour the wet mixture into the dry ingredients. Stir gently until just combined without overmixing, then fold in shredded cheddar and chopped jalapeños evenly.
05 - Spoon approximately 1/2 to 2/3 cup batter onto the preheated waffle iron. Close and cook until waffles are golden brown and set, about 4–5 minutes per batch.
06 - Carefully remove waffles and serve immediately while hot. Optionally, top with butter, extra cheese, sour cream, or honey. Complement with fried eggs, crispy bacon, or spicy salsa for a complete meal.

# Extra Suggestions:

01 - Avoid overmixing the batter to maintain a fluffy texture. Adjust waffle iron heat to achieve desired crispness. Serve waffles hot for optimal flavor and texture.
