In one bowl, mix flour, garlic powder, paprika, salt, and pepper. In a second bowl, pour the buttermilk. Place panko in a third bowl.

Dip each floret in flour mixture, then buttermilk, then panko. Press gently to adhere breadcrumbs.

Arrange coated florets in a single layer in air fryer basket. Spray lightly with olive oil. Cook at 375°F (190°C) for 12–15 minutes, shaking halfway through.

In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.
