In a heavy saucepan, combine granulated sugar, light corn syrup, and water. Heat over medium-high heat, stirring until the mixture reaches 300°F (hard crack stage) on a candy thermometer. Remove from heat and quickly stir in white gel food coloring and vanilla or almond extract.

Immediately dip each apple into the hot candy mixture, twirling to ensure an even coat. Allow excess to drip off, then place the apples back onto the parchment-lined tray.

While the candy coating is still tacky, dust each apple with edible pearl dust or sparkle edible glitter to achieve a shimmering finish. Let the apples cool completely until the coating hardens before handling.
