Quickly stir mint extract and desired amount of green food coloring into the melted chocolate. Fold in the broken Oreo pieces until evenly incorporated.

Pour the mixture into a wax paper-lined baking pan and spread evenly. Place in the freezer and chill for two hours until firm.
