This Slow Cooker Garlic Butter Beef Bites & Potatoes recipe is a comforting, hands-off meal that combines tender beef bites, soft potatoes, and a rich garlic butter sauce. All cooked together in the slow cooker for a delicious, easy dinner with minimal prep!
Ingredients
For the Beef and Potatoes:
- 1.5 lbs beef stew meat or sirloin, cut into bite-sized cubes
- 1 lb baby potatoes, halved (or regular potatoes, cut into chunks)
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
For the Garlic Butter Sauce:
- 1/2 cup unsalted butter, melted
- 1/4 cup chicken broth (or beef broth)
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 tablespoon fresh parsley, chopped (for garnish, optional)
Instructions
Start by cutting the beef stew meat into bite-sized pieces if not pre-cut. Halve the baby potatoes (or cut regular potatoes into chunks). Chop the onion and mince the garlic.
In a medium bowl, whisk together the melted butter, chicken broth, soy sauce, Worcestershire sauce, garlic powder, onion powder, and paprika until combined.
Place the beef cubes, potatoes, onion, and minced garlic into the slow cooker. Pour the garlic butter sauce over the top and toss everything to coat evenly. Season with salt and pepper to taste.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through. If you prefer a thicker sauce, uncover the slow cooker during the last 30 minutes to allow the sauce to reduce slightly.
