Zucchini Noodles Garlic Shrimp (Printable Version)

01 - 2 zucchinis, spiralized
02 - 7 oz shrimps, peeled and deveined
03 - 1 tbsp butter
04 - 1 tbsp extra virgin olive oil
05 - 3 garlic cloves, minced
06 - 0.5 lemon, juice and zest
07 - 2 tbsp parsley, finely chopped
08 - 2 tbsp vegetable stock or white wine
09 - Parmesan cheese, optional for garnish
10 - Salt, to taste
11 - Black pepper, to taste

# Steps to Cook:

01 - In a large skillet, heat butter and olive oil over medium heat until the butter melts and begins to bubble.
02 - Add minced garlic and shrimp to the skillet. Cook for 2–3 minutes on each side until the shrimp are pink and cooked through.
03 - Stir in lemon juice, lemon zest, and vegetable stock or white wine. Simmer for 1–2 minutes to combine flavors.
04 - Add spiralized zucchini to the pan. Toss gently with the shrimp and sauce for 2–3 minutes until just tender but not mushy.
05 - Season with salt and pepper. Sprinkle with chopped parsley and optional parmesan cheese before serving.
