# Everything You’ll Need:

→ Tofu

01 - 14 oz extra-firm tofu, drained and pressed
02 - 2 tbsp cornflour
03 - 1/2 tsp smoked paprika
04 - 1/4 tsp cayenne pepper
05 - 1/2 tsp dried oregano
06 - 1/2 tsp garlic powder
07 - 1/2 tsp onion powder
08 - 1/4 tsp salt

→ Sauce and Pasta

09 - 1 tbsp oil (from sun-dried tomatoes jar or neutral oil)
10 - 2 shallots, finely diced
11 - 2 garlic cloves, minced
12 - 1 tbsp tomato puree
13 - 1/3 cup sun-dried tomatoes, finely chopped
14 - 2 cups vegetable stock
15 - 8 oz farfalle pasta (bow-tie pasta)
16 - 1/2 tsp smoked paprika
17 - 1/4 tsp cayenne pepper
18 - 1/2 tsp dried oregano
19 - Salt to taste
20 - 1 cup plant-based cream
21 - 2 tbsp nutritional yeast
22 - Fresh basil, chopped, for garnish

# Steps to Cook:

01 - Heat oil in a large pan over medium heat. Sauté shallots for 4–5 minutes until softened. Add garlic, tomato puree, and chopped sun-dried tomatoes. Stir in seasonings and vegetable stock. Add farfalle pasta and bring to a boil. Reduce heat and simmer for 6–7 minutes, stirring frequently to prevent sticking.
02 - Add plant-based cream and nutritional yeast to the pan. Stir well and simmer until pasta is cooked to desired texture and sauce is thick and creamy.
03 - Slice tofu into 0.5-inch thick fillets. Optionally shape into rounded fillets. Coat each piece evenly in cornflour and seasoning mix.
04 - Heat oil in a large pan over medium-high heat. Fry tofu fillets for 2–3 minutes per side until golden and crispy. Remove and place on kitchen paper to drain excess oil.
05 - Slice tofu into strips. Serve pasta in bowls, topped with crispy tofu strips and chopped fresh basil.

# Extra Suggestions:

01 - To make the tofu even firmer, try freezing and thawing it before use for a more meat-like texture.
02 - If sauce thickens too quickly, add a splash of extra vegetable stock or water while cooking the pasta.
03 - For a gluten-free version, substitute the pasta with gluten-free farfalle.
