In a mixing bowl, combine mayonnaise, sour cream, jalapeño juice, minced jalapeños, garlic, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir until smooth and well incorporated.

Toss shredded chicken with a portion of the prepared jalapeño sauce until evenly coated.

Heat a non-stick skillet over medium heat. Place one tortilla in the skillet, spread a layer of shredded cheese, then add the chicken mixture, followed by another layer of cheese. Top with a second tortilla to close.

Cook for approximately 1 minute until the bottom is golden brown. Flip carefully using a spatula and continue cooking the other side for 30 to 60 seconds until both sides are crispy and the cheese is fully melted.
