01 -
Wash and dry the apples thoroughly, then insert wooden or lollipop sticks firmly into each. Line a baking sheet with parchment paper or lightly spray with nonstick spray.
02 -
Combine granulated sugar, light corn syrup, and water in a heavy-bottomed saucepan. Stir gently until sugar dissolves, then stop stirring. Attach a candy thermometer and cook over medium heat until the mixture reaches 300°F (hard crack stage).
03 -
Remove syrup from heat immediately at 300°F. Stir in the optional flavored extract and quickly add the first gel food coloring, mixing until fully blended to prepare for dipping.
04 -
Dip each apple individually into the hot candy syrup, twisting to coat evenly. Allow excess to drip off, then place on the prepared baking sheet. Let set at room temperature for 10 to 15 minutes until firm and glossy.
05 -
Reheat remaining syrup gently and stir in the second gel food coloring. Dip apples partially or drizzle colored syrup in stripes over the first layer for a decorative finish.
