Combine 1 tablespoon olive oil, garlic, Italian seasoning, red pepper flakes, salt, and pepper in a resealable bag. Add the chicken breasts, seal, and massage to coat evenly. Set aside for 10–15 minutes at room temperature.

Preheat the oven to 400ºF (200°C) and position a rack in the center.

In a skillet over medium heat, quickly wilt the spinach using 1 tablespoon olive oil. Set aside.

Place marinated chicken breasts in a baking dish. Spread softened cream cheese over each breast, then top with wilted spinach and shredded mozzarella.

Bake the casserole for 20–30 minutes until the internal temperature of the chicken reaches 165˚F (75°C).
