01 - 2 skinless, boneless chicken breasts
02 - 2 tablespoons honey
03 - 1 tablespoon avocado oil

→ Pasta

05 - 12 ounces penne pasta
06 - 1 tablespoon avocado oil
07 - 1 tablespoon grass-fed butter

→ Vegetables

08 - 2 small red and yellow bell peppers, thinly sliced
09 - 1 cup asparagus, cut into 1-inch pieces
10 - 1/4 cup organic frozen peas
11 - 1 small sweet onion, finely diced
12 - 3 fresh garlic cloves, minced

→ Chipotle Parmesan Cream Sauce

13 - 1 cup heavy cream
14 - 1/2 cup freshly grated Parmesan cheese
15 - 2 tablespoons chipotle peppers in adobo sauce
16 - 1 teaspoon paprika
17 - 1/4 teaspoon cayenne pepper (optional)

# Steps to Cook:

01 - Preheat a large skillet over medium heat. Season chicken breasts with salt and pepper. Add avocado oil to the skillet and cook chicken for 6-7 minutes per side until golden and cooked through. In the last minute, drizzle honey over chicken, turning once to glaze. Remove, slice thinly, and set aside.
02 - Cook penne according to package instructions. Reserve half a cup of pasta water before draining. Set pasta aside.
03 - In the same skillet, add avocado oil and butter. Sauté onions for 3-4 minutes until softened and lightly caramelized. Add garlic, bell peppers, and asparagus; cook 3-4 minutes until tender-crisp. Stir in peas and cook for 1-2 minutes more.
04 - Blend heavy cream, chipotle peppers with adobo sauce, paprika, optional cayenne pepper, and Parmesan until smooth. Pour sauce and reserved pasta water into the skillet with vegetables. Stir and simmer 4-5 minutes until slightly thickened. Season with salt and pepper to taste.
05 - Add cooked penne and sliced chicken to the skillet. Toss thoroughly to coat everything in sauce. Cook an additional minute to meld flavors.
06 - Sprinkle with fresh cilantro or parsley and shaved Parmigiano. Serve immediately with hot garlic bread if desired.
