Place the eggs in a saucepan and cover with cold water.

Bring water to a boil over medium-high heat, then cover, remove from heat, and let sit for 10–12 minutes.

Transfer eggs to an ice water bath and let cool completely.

Peel the eggs and slice them in half lengthwise.

Gently scoop out yolks and place in a bowl. Add spicy mustard, mayonnaise, salt, and pepper. Mash until smooth.

Spoon or pipe yolk mixture back into egg whites. Top with crumbled crispy bacon and chopped green onions.
