Chipotle Cheesy Chicken (Printable Version)

# Everything You’ll Need:

01 - Black pepper, as much as you want
02 - Salt, whatever works for your taste
03 - 1 tablespoon olive oil or butter
04 - 2 cups (200 g) cheddar cheese, shredded
05 - 3 cloves garlic, chopped tiny
06 - 1 small onion, diced
07 - 1 tablespoon of the sauce from your chipotle can
08 - 1–2 chipotle peppers in adobo, chopped up
09 - 1 cup (240 ml) heavy cream
10 - 3 cups (720 ml) chicken broth
11 - 2 cups (about 300 g) chicken, cooked and either shredded or cut up
12 - 340 g penne or your fave short pasta

# Steps to Cook:

01 - Try it and add more salt or pepper (or extra adobo sauce) if you want. Let everything hang out for a few minutes, uncovered. It’ll thicken up a tad before you dig in.
02 - Lower the heat a bit. Sprinkle in the shredded cheddar. Keep stirring until it’s all melted and smooth.
03 - Pour in the pasta, not cooked yet. Cover up, let things bubble on low, and give it a stir now and then. After 10–12 minutes, pasta should be just right, and most of the liquid will be soaked up.
04 - Splash in the chicken broth and that heavy cream. Mix it up until every bit is blended well.
05 - Toss in the cooked chicken, those chopped chipotles, and a spoonful of sauce from the can. Give it all a good mix so everything’s smoky and coated.
06 - Set a big pot or deep pan on the stove and warm up your butter or olive oil over medium. Throw in your onion and garlic. Cook them a couple minutes, just until everything smells awesome and looks soft.

# Extra Suggestions:

01 - Let the chipotle peppers mix with the chicken for a stronger flavor before adding any liquids. Just stir them together a bit so the sauce gets nice and smoky.
