# Everything You’ll Need:

→ Steak

01 - 1 lb ribeye or sirloin steak, cut into bite-sized cubes
02 - 1 tbsp olive oil
03 - Spice rub, cumin, and chili powder to taste

→ Cheeses

04 - 1 lb Velveeta cheese, cubed
05 - 6 oz sharp cheddar cheese
06 - 8 oz pepper jack cheese

→ Additional Ingredients

07 - 10 oz can Rotel tomatoes with green chilies, undrained
08 - 1/2 cup heavy cream
09 - 1/2 cup diced white onion
10 - 4 oz can pickled jalapeños

# Steps to Cook:

01 - Preheat smoker or grill to medium-high heat. Toss cubed steak with olive oil and seasoning blend until evenly coated.
02 - Grill seasoned steak cubes for 5-7 minutes, or until browned and cooked to desired doneness. Remove and set aside.
03 - In a cast iron skillet over medium heat, combine Velveeta, sharp cheddar, and pepper jack cheeses. Stir until fully melted and smooth.
