Set your oven to heat at 175°C. Toss some parchment paper or a silicone mat onto a baking sheet and keep it handy.

Cut the French loaf down the middle and put both pieces, open side facing up, onto your lined tray. Mix together the butter, garlic salt, and Italian herbs. Smear this buttery blend all over both sides of the bread.

Heat a big skillet on medium-high. Break up the ground beef and let it brown for 6 to 8 minutes while you stir now and then. Dump in the onion, green pepper, and minced garlic too. Cook that for 4 to 5 minutes till the veggies look soft. You can drain the leftover fat if there’s a lot.

Pour in tomato sauce, ketchup, brown sugar, mustard, Worcestershire, pepper, salt, onion powder, and paprika. Turn the heat down to medium-low. Let it all simmer for 6 to 8 minutes, stirring now and then, till it thickens up nicely.

Evenly spread the warm sloppy joe mix over each half of bread. Bring on the cheese—cover the top with both cheddar and mozzarella so it’s totally blanketed.

Slide the tray in for 12 to 14 minutes. Wait till the cheese looks gooey and goes golden at the edges—then it’s good to go.

Take it out of the oven. Give it a minute or two so you don’t burn yourself, then slice up each half into pieces. Enjoy while it’s melty!
