In a large pan, cook ground beef with diced onion and green pepper until beef is no longer pink and vegetables are tender. Drain excess grease.

Pour in sloppy joe sauce, stir to combine, and heat until simmering for a few minutes.

Add cooked rotini pasta to the pan and stir thoroughly to coat with sauce.

Stir in 1 to 1½ cups of shredded cheddar cheese until melted and fully incorporated.

Sprinkle remaining cheddar cheese on top, then heat on low until cheese melts completely. Optionally cover the pan to expedite melting. Garnish with parsley if desired.
