In a bowl, combine shrimp with garlic powder, cumin, paprika, salt, and pepper. Let marinate for 15 minutes.

Heat 1 tablespoon olive oil in a skillet over medium heat. Add shrimp and cook for 3 to 4 minutes until pink and opaque.

Add diced bell peppers and onions to the skillet; sauté for 2 to 3 minutes until softened.

Remove shrimp and vegetables from skillet and set aside. Wipe skillet clean.

Place one tortilla in skillet. Sprinkle half of the cheese over one half of the tortilla. Layer shrimp mixture on cheese, then top with remaining cheese.

Fold tortilla over filling and cook 2 to 3 minutes per side until golden brown and cheese melts.
