Chicken Shawarma Bowls (Printable Version)

# Everything You’ll Need:

→ Chicken

01 - 0.5 yellow onion, cut in thin half-moons
02 - 1 lemon, zest and juice both
03 - 0.5 teaspoon ground turmeric
04 - 1 teaspoon smoked paprika
05 - 1 teaspoon ground coriander
06 - 1 teaspoon sea salt
07 - 60 ml olive oil
08 - 2 garlic cloves, minced up
09 - 1 teaspoon ground cumin
10 - 0.25 teaspoon ground black pepper
11 - 900 g chicken thighs, no skin or bones
12 - 0.125 teaspoon ground cinnamon

→ Rice

13 - 0.5 teaspoon ground turmeric
14 - 540 g long-grain basmati rice

→ White Sauce

15 - Pinch of ground turmeric
16 - Sprinkle of cayenne
17 - 2 tablespoons fresh lemon juice
18 - 120 ml mayo
19 - 1 teaspoon caraway seeds

→ Serving

20 - Pickled red onions
21 - 2 cups cucumber, sliced up
22 - Crushed pita chips
23 - Romaine heart, thinly sliced
24 - Grape tomatoes, sliced
25 - Ready-made hummus

# Steps to Cook:

01 - Chop the lettuce into narrow strips. Cut the cucumber into little half-moons. Slice those grape tomatoes in half.
02 - Grab a small bowl and mix mayo, lemon juice, a bit of turmeric, cayenne, and caraway seeds. Stir well to make it smooth. Pop the bowl into the fridge until it’s needed.
03 - Wash the basmati rice in cold water and drain. Cook as the bag says, but toss in turmeric and a dash of salt too. When it’s ready, use a fork to make it fluffy.
04 - Add lemon zest and juice, olive oil, salt, coriander, cumin, paprika, turmeric, black pepper, cinnamon, and garlic into a big bowl. Stir, then add the chicken and toss to cover everything. Wrap it up and chill for 2 to 4 hours.
05 - Heat the oven to 200°C.
06 - Lay sliced onion on a baking tray. Put the marinated chicken thighs right on top. Cook for 20 to 25 minutes, or until done (check for 80°C inside). Let it sit 5-10 minutes, then cut the chicken into strips about 2 cm wide. Slice across the grain.
07 - Spoon turmeric rice into shallow bowls. Lay sliced chicken and baked onions on top. Add piles of lettuce, cucumber, tomatoes, pickled onions, hummus, and smashed pita chips. Pour the white sauce over everything at the end.

01 - Let your chicken marinate for 4 hours if you want the most punchy taste.
02 - This can make more rice than you need, so tailor the amount if you like.
