Rotisserie Chicken Mix (Printable Version)

Juicy chicken, crisp celery, and green onions all smothered in a creamy sauce—great when you need something fresh and quick to eat.

# Everything You’ll Need:

→ Dressing

01 - 80 g mayo
02 - 0.5 g sea salt
03 - 0.5 g dried dill
04 - 5 g Dijon mustard

→ Salad Base

05 - 25 g green onion, chopped (about 3 stalks)
06 - 320 g rotisserie chicken, shredded (use light, dark, or both)
07 - 120 g celery, diced (approx. 2 ribs)

# Steps to Cook:

01 - Toss in the salt and dill, then give everything one last quick whiz so it all comes together. Taste and see if you want more seasoning, then you're good to go.
02 - Give the whole thing about 5 pulses, scrape the edges, and pulse another handful of times (5 to 10), just until it's well mixed but still has some chunks.
03 - Throw the shredded chicken, mayo, and Dijon into the food processor along with your chopped veggies.
04 - Pop your celery and green onion into the processor and pulse a few times until everything's in little bits. Use a spatula to wipe down the sides if needed.

# Extra Suggestions:

01 - Don't run the machine too long, or you'll end up with mush. Stop when you can still spot bits of chicken and veggies.
