# Everything You’ll Need:

→ Roasted Sweet Potatoes

01 - 2 medium sweet potatoes, peeled and cubed
02 - 1 tbsp olive oil

06 - 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
07 - 1 tbsp olive oil
08 - 0.5 tsp garlic powder
09 - 0.5 tsp onion powder
10 - Salt and black pepper to taste

→ Fluffy Rice Base

11 - 2 cups cooked white or brown rice

→ Creamy Spiced Sauce

12 - 0.5 cup plain Greek yogurt or mayonnaise
13 - 1 tbsp lime juice
14 - 1 tsp sriracha, adjusted to taste
15 - 0.5 tsp ground cumin
16 - 0.25 tsp paprika
17 - Pinch of cayenne pepper (optional)

# Steps to Cook:

01 - Toss cubed sweet potatoes with olive oil, paprika, garlic powder, salt, and black pepper. Spread on a baking sheet and roast in a preheated oven at 400°F for 20 to 25 minutes, flipping halfway through until tender and caramelized.
02 - Season chicken cubes with garlic powder, onion powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat and cook the chicken for 5 to 7 minutes, until golden and cooked through.
03 - In a small bowl, whisk together Greek yogurt or mayonnaise, lime juice, sriracha, cumin, paprika, cayenne pepper if using, and salt until smooth and creamy.
04 - Cook the white or brown rice as per package instructions. Steam or sauté the green vegetables if using.
05 - Divide cooked rice among serving bowls. Top with roasted sweet potatoes, pan-seared chicken, and the green vegetables. Drizzle generously with creamy spiced sauce and garnish with fresh cilantro or parsley. Serve immediately.
