Set the oven to 425°F to prepare for baking.

Heat an oven-safe skillet over medium-high heat, add olive oil and steak slices. Season with garlic salt and black pepper, cook 3-4 minutes until browned. Remove steak and set aside.

Reserve 1 tablespoon of cooking juices, add bell pepper and onion to skillet, sauté 4-5 minutes until softened and caramelized. Remove and set aside.

Spread waffle fries evenly in skillet, layer 4 cheese slices over fries, top with cooked steak and sautéed vegetables. Repeat layering ending with remaining cheese slices.

Place skillet in oven and bake 8-10 minutes until cheese is melted and bubbly.

Remove from oven, let cool slightly, then serve hot. Optionally garnish with chopped parsley or chives.
