Stir in taco seasoning and water to the browned beef, simmer and cook for about 5 minutes until the mixture thickens.

In a mixing bowl, combine mayonnaise and chipotle sauce until smooth and well blended.

Lay each tortilla flat and layer with nacho cheese sauce, seasoned beef, Mexican rice, and chipotle mayonnaise. Add dollops of sour cream and sprinkle tortilla strips on top. Fold the tortillas tightly to enclose the filling.

Heat a non-stick skillet over medium heat. Sprinkle shredded Colby Jack cheese on the pan surface before placing each burrito seam-side down. Grill until the bottom is golden brown, then carefully flip and grill the opposite side until golden and cheese has melted.
