Gradually blend the dry ingredients into the wet mixture. Stir in orange gel food coloring, mixing thoroughly until the dough reaches a vibrant pumpkin hue.

Roll the dough into 1.5-inch balls, flatten slightly, and place them 2 inches apart on the prepared baking sheets. Optionally, smooth the tops with the bottom of a glass.

Bake for 10 to 12 minutes until edges are just golden. Allow cookies to rest on the baking sheet for 5 minutes before transferring to a cooling rack.

Once fully cooled, pipe jack-o’-lantern faces onto the cookies using black decorating icing. Use thin lines for details and let icing set before serving.
