01 - 2 large eggs, room temperature
02 - ½ cup canola oil or sunflower oil
03 - 2 tablespoons tap water
04 - 1 teaspoon vanilla extract
05 - ⅔ cup all-purpose flour
06 - ⅔ cup Dutch-processed cocoa powder
07 - ½ cup granulated sugar
08 - ½ cup powdered sugar
09 - ½ teaspoon salt
10 - 4 ounces cream cheese baking chips or white chocolate chips

→ Cheesecake Layer

11 - 8 ounces full-fat spreadable cream cheese, chilled
12 - ¼ cup granulated sugar
13 - 1 large egg, room temperature
14 - 1 teaspoon vanilla extract
15 - 2 tablespoons sour cream
16 - 10 standard Oreo cookies, broken into pieces

# Steps to Cook:

01 - Preheat oven to 325°F and line an 8-inch square baking pan with parchment paper. In a large bowl, whisk eggs, oil, water, and vanilla until emulsified. Sift flour, cocoa powder, salt, granulated sugar, and powdered sugar into the wet ingredients. Fold with a spatula until just combined forming a thick glossy batter. Stir in cream cheese chips gently. Pour batter evenly into the prepared pan and spread to edges. Set aside while preparing cheesecake layer.
02 - In a clean bowl, whisk spreadable cream cheese and sugar until smooth and creamy. Incorporate the egg and vanilla, then mix in sour cream. Crush six Oreo cookies and fold into the batter with a spatula. Pour the cheesecake mixture over the brownie layer and spread evenly. Crumble remaining Oreo cookies over the top.
03 - Bake in the center of the oven for 35 to 40 minutes until the cheesecake layer is set. Remove and cool completely before refrigerating for at least 4 hours to chill thoroughly. Slice into 16 brownies and serve chilled.

# Extra Suggestions:

01 - Use chilled spreadable cream cheese without needing to soften at room temperature. Substituting block cream cheese requires softening and may affect batter smoothness.
