Toss the chopped spinach, diced tomato, mozzarella, feta, and onion together in a big bowl. Mix them well so everything's all even.

Spoon one third of your veggie-cheese mix onto one side of every tortilla. Flip the untouched half over to close it up and make a half-moon shape.

Warm a bit of oil in a wide frying pan or griddle set on medium. Lay your folded quesadillas in there. Press down a bit with your spatula and let them go for 3 to 4 minutes on both sides. They're ready when the outside is golden and the cheese is nice and gooey.

Chop each quesadilla into four pieces. Enjoy right away, maybe with some salsa, sour cream, or pico de gallo if you like.
