Spinach Feta Quesadillas (Printable Version)

Quick crispy tortillas packed with tangy feta, gooey mozzarella, spinach, and tomato for a fast Mediterranean lunch or dinner.

# Everything You’ll Need:

→ Filling

01 - 1 cup (110 grams) shredded mozzarella cheese
02 - 1/2 cup (75 grams) crumbled feta cheese
03 - 1 cup (30 grams) chopped fresh spinach
04 - 1/3 cup (33 grams) chopped red onion
05 - 1 medium tomato, diced (try cherry, grape, or plum)

→ Base

06 - 3 big flour tortillas for burritos

# Steps to Cook:

01 - Toss the chopped spinach, diced tomato, mozzarella, feta, and onion together in a big bowl. Mix them well so everything's all even.
02 - Spoon one third of your veggie-cheese mix onto one side of every tortilla. Flip the untouched half over to close it up and make a half-moon shape.
03 - Warm a bit of oil in a wide frying pan or griddle set on medium. Lay your folded quesadillas in there. Press down a bit with your spatula and let them go for 3 to 4 minutes on both sides. They're ready when the outside is golden and the cheese is nice and gooey.
04 - Chop each quesadilla into four pieces. Enjoy right away, maybe with some salsa, sour cream, or pico de gallo if you like.

# Extra Suggestions:

01 - Sweet tomatoes like grape or cherry will kick up the taste. Stuffing the tortillas too much? They'll get soggy.
