Place the chicken breast into a pan of salted boiling water and poach for 15–20 minutes until fully cooked. Remove from water and set aside.

Slice the potatoes into fries. Place in an air fryer basket or oven tray, toss with seasoning and olive oil spray. Cook at 385°F in the air fryer for 25 minutes or at 400°F in the oven for 30 minutes.

Shred the cooked chicken and mix thoroughly with cream cheese and BBQ sauce until fully combined.

Place cooked fries in an ovenproof dish or keep in the air fryer basket. Top with BBQ pulled chicken and sprinkle shredded cheese evenly over the top.

Bake for 10–15 minutes until the cheese is melted and golden.

Finish with a drizzle of sriracha mayonnaise and a sprinkle of sliced green onion before serving.
