Loaded Cheese Fries BBQ Beef (Printable Version)

01 - 7 oz chicken breast
02 - 1.2 lb russet potatoes
03 - 1 tbsp roast potato seasoning or Cajun seasoning
04 - 3 tbsp BBQ sauce
05 - 3 tbsp light cream cheese
06 - 1 cup shredded cheese, four cheese blend
07 - 1 tbsp sriracha mayonnaise
08 - 1 green onion, green end sliced

# Steps to Cook:

01 - Place the chicken breast into a pan of salted boiling water and poach for 15–20 minutes until fully cooked. Remove from water and set aside.
02 - Slice the potatoes into fries. Place in an air fryer basket or oven tray, toss with seasoning and olive oil spray. Cook at 385°F in the air fryer for 25 minutes or at 400°F in the oven for 30 minutes.
03 - Shred the cooked chicken and mix thoroughly with cream cheese and BBQ sauce until fully combined.
04 - Place cooked fries in an ovenproof dish or keep in the air fryer basket. Top with BBQ pulled chicken and sprinkle shredded cheese evenly over the top.
05 - Bake for 10–15 minutes until the cheese is melted and golden.
06 - Finish with a drizzle of sriracha mayonnaise and a sprinkle of sliced green onion before serving.
