John Wayne Beef Biscuit (Printable Version)

Layered beef, biscuit crust, cheese, and fresh veggies baked until golden and bubbly.

# Everything You’ll Need:

→ Meat and Seasoning

01 - 2 pounds ground beef, browned and drained
02 - 1 ounce packet taco seasoning with water as per packet instructions or homemade taco seasoning

→ Dough

03 - 16 ounces canned large biscuits

→ Dairy and Sauces

04 - 1/2 cup sour cream
05 - 1/2 cup mayonnaise
06 - 8 ounces cheddar cheese, shredded and divided

→ Vegetables

07 - 1 medium onion, halved and sliced
08 - 2 medium tomatoes, sliced
09 - 1 medium red bell pepper, halved and sliced
10 - 4 ounces canned sliced jalapeno peppers

# Steps to Cook:

01 - Preheat oven to 350°F and position oven rack in the center. Spray a 13x9 inch glass baking dish with nonstick spray.
02 - Arrange biscuits in a single layer in the baking dish, pressing them together and against the sides halfway up. Place dish on a baking sheet and bake for 12-15 minutes until edges are lightly browned. Remove from oven and set aside, leaving oven on.
03 - While biscuits bake, combine browned ground beef with taco seasoning and water; cook according to packet instructions. Transfer to a bowl and wipe out the pan.
04 - In a bowl, combine sour cream, mayonnaise, half of the shredded cheddar cheese, and half of the sliced onions. Stir until well blended and set aside.
05 - In the cleaned pan, sauté the remaining onions and sliced red bell peppers until they begin to soften.
06 - Layer the biscuit crust with cooked taco meat, tomato slices, sautéed bell pepper and onion mixture, canned jalapenos, and sour cream mixture. Top with remaining shredded cheddar cheese. Bake uncovered for 30-40 minutes until biscuit edges are lightly browned and cheese is melted.
