01 - 1 lb boneless, skinless chicken thighs or chicken breasts

02 - Kosher salt, to taste
03 - Black pepper, to taste
04 - BBQ seasoning blend, to taste
05 - 3 tablespoons BBQ sauce, plus extra for drizzling
06 - 2 tablespoons hot honey, plus extra for drizzling

→ Dairy and Cheese

07 - 3 cups shredded cheese of choice

→ Breads and Wraps

08 - 4 large burrito-size flour tortillas

→ Herbs and Garnishes

09 - 1/2 cup chopped cilantro (optional)
10 - Optional toppings: sour cream, jalapeños

11 - Cooking oil of choice, as needed

# Steps to Cook:

01 - Preheat griddle to medium heat. Add cooking oil, chicken, kosher salt, black pepper, and BBQ seasoning. Cook for 6 minutes, stirring occasionally with spatulas.
02 - Stir in BBQ sauce and hot honey with the chicken. Continue cooking for 2 minutes until well combined. Remove chicken from griddle, clean surface, and lower heat to medium-low.
03 - Brush griddle with cooking oil. Place tortillas flat on griddle. Sprinkle half of the cheese over one half of each tortilla. Add cooked chicken, drizzle with additional BBQ sauce and hot honey, sprinkle cilantro if using, then top with remaining cheese.
04 - Fold tortillas over fillings and cook for 1-2 minutes per side until cheese melts and tortillas are crisped to desired texture. Remove from griddle.
05 - Serve quesadillas hot with optional sour cream and jalapeños as desired.
