While chicken bakes, place diced potatoes in salted boiling water. Cook until fork-tender, about 12–15 minutes, then drain thoroughly.

Melt butter in a large skillet over medium heat. Add minced garlic and sauté for 1–2 minutes. Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese and cook, stirring, until melted and smooth.
