Grilled Pimento Cheese (Printable Version)

# Everything You’ll Need:

→ For the pimento cheese filling

01 - 8 oz sharp cheddar cheese, shredded
02 - ¼ cup diced pimento peppers
03 - 4 tablespoons cream cheese, at room temperature
04 - ¼ cup mayonnaise
05 - ½ tablespoon lemon juice
06 - ½ tablespoon chopped fresh chives
07 - ¼ teaspoon kosher salt
08 - ¼ teaspoon black pepper

→ For the grilled cheese sandwiches

09 - 3 tablespoons unsalted butter, softened
10 - ¾ teaspoon Italian seasoning
11 - ½ teaspoon kosher salt
12 - 8 slices Texas toast or thick rustic bread

# Steps to Cook:

01 - In a medium bowl, mix shredded cheddar, pimentos, cream cheese, mayonnaise, lemon juice, chives, salt, and pepper until fully combined. Cover and refrigerate for at least 1 hour.
02 - In a small bowl, blend softened butter with Italian seasoning and kosher salt. Spread the mixture evenly on one side of each bread slice.
03 - Lay four slices of bread buttered-side down. Spread approximately ⅓ cup of the pimento cheese mixture on each. Top with remaining bread slices, buttered-side up.
04 - Heat a skillet over medium-low heat. Cook sandwiches for 3–4 minutes per side, until golden brown and cheese is melted.
