Garlic Butter Chicken Corn (Printable Version)

# Everything You’ll Need:

01 - 2 medium zucchini, sliced (about 4 cups)
02 - 1.5 cups cooked corn kernels (approximately 3 ears)
03 - 5 cloves garlic, minced
04 - 0.5 cup fresh cilantro, chopped

05 - 1 lb (450 g) skinless, boneless chicken breasts, sliced into strips

06 - 4 tablespoons unsalted butter, divided
07 - 2 tablespoons olive oil, divided

08 - 0.5 teaspoon smoked paprika
09 - 0.5 teaspoon chili powder
10 - 0.25 teaspoon salt, or to taste
11 - Black pepper, freshly ground, to taste

# Steps to Cook:

01 - Heat a large high-sided cast-iron skillet over medium heat for 1 minute. Add 1 tablespoon olive oil and sliced zucchini. Season with a pinch of salt and black pepper. Sauté for approximately 3 minutes, turning once to brown both sides. Transfer zucchini to a plate and set aside.
02 - Slice chicken breasts into strips and season evenly with smoked paprika, chili powder, salt, and freshly ground black pepper.
03 - In the same skillet, heat remaining 1 tablespoon olive oil over medium heat. Place chicken strips in a single layer and cook without turning for about 4 minutes until browned on one side.
04 - Flip chicken strips, add minced garlic to the pan, and cook for 2 minutes. Reduce heat to low, stir in lime juice and 2 tablespoons butter. Continue cooking while stirring frequently for 2 minutes or until chicken is cooked through and garlic is softened.
05 - Return cooked zucchini and corn kernels to the skillet. Add remaining 2 tablespoons butter and stir over low heat for 2 minutes until butter is melted and ingredients are evenly coated.
06 - Stir in half of the chopped cilantro. Adjust seasoning with additional salt, smoked paprika, chili powder, or lime juice as desired. Serve garnished with remaining cilantro and a light sprinkle of chili powder for presentation.
