Add rolled oats, cornstarch, baking powder, and salt to the blended mixture. Include honey and cinnamon if desired. Blend again until the batter is evenly combined and slightly thickened.

Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil to prevent sticking.

Pour approximately 1/4 cup of batter per pancake onto the heated surface. Cook for 2 to 3 minutes until bubbles form on the top and the edges are set.
