Oven-Baked Cheesy Chicken Tacos (Printable Version)

# Everything You’ll Need:

→ Chicken

01 - 1.5 lbs boneless, skinless chicken breasts or thighs
02 - 2 tbsp olive oil
03 - 1 tbsp taco seasoning (chili powder, cumin, paprika, garlic powder, onion powder)
04 - Juice of 1 lime

→ Queso

05 - 1 cup shredded cheddar cheese
06 - 1 cup shredded Monterey Jack cheese
07 - 4 oz cream cheese
08 - 0.5 cup milk
09 - 0.5 cup salsa or Rotel tomatoes
10 - Optional: diced jalapeños

→ Tacos

11 - 8 soft flour or corn tortillas
12 - Shredded lettuce
13 - Diced tomatoes
14 - Chopped cilantro
15 - Diced onions
16 - Sliced avocado
17 - Lime wedges for serving

# Steps to Cook:

01 - Heat olive oil in a skillet over medium heat. Season chicken evenly with taco seasoning and lime juice. Cook chicken for 6 to 7 minutes per side until golden brown and cooked through. Remove from heat and let rest before shredding or dicing.
02 - In a saucepan over medium heat, combine cream cheese and milk. Stir continuously until mixture is smooth. Add shredded cheddar and Monterey Jack cheeses along with salsa. Stir until all cheese is melted and mixture is creamy. Adjust consistency with additional milk if needed. Optionally add diced jalapeños for heat.
03 - Warm tortillas in a dry skillet or microwave until pliable. Fill each tortilla with cooked chicken, then drizzle generously with queso. Top with shredded lettuce, diced tomatoes, chopped cilantro, diced onions, and sliced avocado. Serve immediately with lime wedges.
