Preheat oven to 350°F (180°C) fan-forced and line baking trays with parchment paper.

In a large bowl, mix ground beef, finely chopped onion, dried breadcrumbs, Worcestershire sauce, French Onion soup mix, and two lightly beaten eggs until thoroughly combined.

Cut each puff pastry sheet in half horizontally to yield 10 rectangles.

Spoon a line of filling down the center of each pastry rectangle. Brush one long edge with beaten egg, roll tightly over the filling, and seal the edge. Place seam-side down on lined trays.

Cut each roll into 6 equal pieces to form mini sausage rolls. Arrange on trays, leaving space between each, and brush tops with remaining beaten egg for golden finish.

Bake in preheated oven for approximately 20 minutes or until pastry is puffed, golden, and filling is fully cooked.
