Tender chicken, crunchy spuds, and a fresh, colorful salad make a meal that brings everyone together.

# Everything You’ll Need:

→ Roast Chicken

01 - Fresh herbs like parsley, rosemary, or thyme for topping
02 - Your favorite amount of salt and pepper
03 - 1 tablespoon (7 g) paprika
04 - 1 tablespoon (7 g) onion powder
05 - 1 tablespoon (8 g) garlic powder
06 - 2 tablespoons (30 ml) olive oil
07 - 1 whole chicken (about 1.8–2.3 kg), cleaned and dried

→ Roasted Potatoes

08 - 1 teaspoon (1 g) dried rosemary
09 - Sprinkle salt and pepper how you like
10 - 2 tablespoons (30 ml) olive oil
11 - 4 big potatoes (around 1.2 kg), peeled then cubed

→ Mixed Green Salad

12 - 1/4 cup (60 ml) balsamic vinaigrette
13 - 1/4 red onion (20 g), sliced thin
14 - 1 cucumber (200 g), cut into rounds
15 - 1 cup (150 g) cherry tomatoes, halved
16 - 4 cups (120 g) salad greens—romaine, spinach, or arugula

# Steps to Cook:

01 - Crank up the oven to 220°C, or 425°F, and wait till it's hot.
02 - Pour 2 tablespoons of olive oil plus paprika, onion powder, garlic powder, some salt, and pepper into a bowl. Smear it all over the chicken with your hands.
03 - Lay the chicken in the roasting pan with the breast up. Put it in the oven and let it cook for about 75 minutes. Use a thermometer to make sure it hits 75°C at the thigh. Give it a break for 10 minutes before slicing.
04 - While waiting on the chicken, mix potato cubes with 2 tablespoons olive oil, some rosemary, salt, and pepper until they all have a nice coating.
05 - Spread the potatoes over a baking sheet so they’re in one layer. Pop them in with the chicken for the last 30–35 minutes. Leave them until they get crispy and look golden.
06 - Grab a big bowl and throw in salad greens, cucumbers, tomato halves, and onion slices. Pour over the balsamic dressing and toss lightly just before you eat.
07 - Slice the rested chicken and plate it with the potatoes and salad. Sprinkle with some fresh herbs, if you’re into that.
