Break graham crackers into squares. Sandwich one marshmallow and one chocolate segment between two graham crackers, pressing gently to secure.

Using tongs, dip each s'more completely into the batter, letting excess drip off before frying.

Lower battered s'mores into hot oil using tongs, holding each for a few seconds to help the coating set. Fry for 3–4 minutes until golden, turning once.
