In a mixing bowl, thoroughly mix shredded chicken, buffalo sauce, and mozzarella until well combined.

Form the mixture into 3-inch sticks and freeze for at least 30 minutes to firm up.

Set out three shallow dishes containing flour, beaten eggs, and panko breadcrumbs for coating.

Remove frozen sticks from freezer and sequentially coat each in flour, dip in egg, then cover with panko breadcrumbs.

Pour cooking oil into a frying pan to cover the bottom and preheat over medium heat.

Fry the breaded sticks in batches for 2–4 minutes or until golden brown and crisp on all sides.
