06 - 2 celery stalks, chopped
07 - 3 medium Yukon Gold potatoes, peeled and cubed

08 - 4 cups low-sodium fish stock or chicken broth
09 - 1 cup whole milk
10 - 1 cup heavy cream

→ Herbs and Spices

11 - 1 bay leaf
12 - 1 teaspoon dried thyme or 1 tablespoon fresh thyme
13 - Salt and black pepper, to taste
14 - 1 tablespoon fresh dill, chopped

# Steps to Cook:

01 - Heat olive oil or butter in a large pot over medium heat. Add chopped onion and cook for 3 to 4 minutes until translucent.
02 - Add minced garlic, diced carrots, and chopped celery. Sauté for 5 minutes until the vegetables begin to soften.
03 - Incorporate cubed Yukon Gold potatoes, bay leaf, and thyme. Pour in fish stock and bring the mixture to a boil.
04 - Reduce heat to low and simmer for 10 to 12 minutes until potatoes are tender.
05 - Stir in whole milk and heavy cream. Maintain gentle simmer for 5 minutes without boiling.
06 - Add salmon chunks to the pot, cover, and let poach for 5 to 7 minutes until fully cooked through.
07 - Season with salt, black pepper, chopped fresh dill, and optional lemon juice. Allow chowder to rest for a few minutes before serving.
