Chicken Grape Mix (Printable Version)

Chicken breast, fresh grapes, celery, pecans, and a creamy sauce make this meal both refreshing and satisfying.

# Everything You’ll Need:

→ Salad

01 - 100 g pecans, toasted then roughly chopped up
02 - 80 g red onion, chopped small
03 - 100 g celery, cut into thin slices
04 - 300 g red seedless grapes, cut in half
05 - 450 g cooked chicken breast, cut into cubes

→ Dressing

06 - 3 g black pepper
07 - 3 g salt, or as much as you like
08 - 8 g fresh dill, minced
09 - 30 ml lemon juice
10 - 120 g sour cream or plain Greek yogurt
11 - 120 g mayonnaise

# Steps to Cook:

01 - Spoon that creamy dressing over your chicken mix, then toss everything together until it’s coated well. You can chill it (covered) for up to four days or munch right away.
02 - Stir together the mayo, Greek yogurt (or sour cream), squeeze of lemon, chopped dill, and your salt and pepper in a small bowl till it looks nice and smooth.
03 - Toss your grape halves, chicken cubes, pecans, celery slices, and onion chunks in a big bowl so it’s all mixed up.
04 - Warm a dry frying pan over medium-low and toss in the pecans. Keep them moving with a spoon until they smell toasty and look a little browned (about 3 minutes). Pour onto a cutting board, chop them up, and let them cool down.

# Extra Suggestions:

01 - Using freshly cooked chicken gives you great bite, but grabbing a rotisserie or using roasted chicken works just fine.
02 - No grapes? Try substituting with chopped pears, apples, or even some dried cranberries instead.
03 - For a nut-free spin, ditch the pecans or use almonds or walnuts if you prefer.
