Citrus Dijon Grilled Chicken (Printable Version)

# Everything You’ll Need:

→ Chicken

01 - 4 boneless skinless chicken breasts

→ Marinade

02 - ½ cup olive oil
03 - 2 tablespoons dijon mustard
04 - Juice of 1 lime
05 - Juice of 1 lemon
06 - Juice of 2 oranges
07 - 1 teaspoon salt
08 - 1 teaspoon garlic powder
09 - 1 teaspoon Italian seasoning
10 - 1 teaspoon fresh thyme, finely chopped (or ¼ teaspoon dried herbs)
11 - 1 teaspoon fresh oregano, finely chopped (or ¼ teaspoon dried herbs)
12 - ¼ teaspoon crushed red pepper flakes

# Steps to Cook:

01 - Combine all marinade ingredients and whisk vigorously to combine (or combine in a jar, cover, and shake well). Reserve ¼ cup of the marinade and set aside for later.
02 - In a bowl or large zip-close bag, combine chicken and marinade (excluding reserved portion) and toss to coat well. Chill for at least 1 hour or up to overnight.
03 - Preheat the grill to medium heat and oil the grates.
04 - Place chicken on the grill using tongs or a fork. Cook for 5-7 minutes.
05 - Turn the chicken and brush half of the reserved marinade on the tops. Cook for another 5-7 minutes.
06 - Turn the chicken again and brush the remaining marinade over the tops. Continue cooking for an additional 2-4 minutes, or until the chicken is cooked through and juices run clear.
07 - Serve immediately, garnished with fresh herbs and wedges of lemon, lime, and/or orange. Enjoy!

# Extra Suggestions:

01 - You can marinate this chicken for as little as 30 minutes, but for best results, marinate for at least 1 hour or up to 12 hours.
02 - If you lack a variety of citrus fruits, you can substitute more of one type (e.g., all lemon or all lime).
03 - For an extra flavor boost, double the garlic powder and crushed red pepper flakes.
04 - Herbs de Provence can be used as a substitute for Italian seasoning for enhanced flavor.
