01 - 4 salmon fillets, about 6 oz each
02 - 2 tablespoons olive oil
03 - 3 tablespoons honey
04 - 2 tablespoons minced chipotle peppers in adobo sauce
05 - 1 tablespoon fresh lime juice
06 - 2 garlic cloves, minced
07 - 1 teaspoon smoked paprika
08 - Salt and freshly ground black pepper, to taste

09 - 3 cups cooked jasmine or brown rice
10 - 1 cup corn kernels, grilled or roasted preferred
11 - 1 cup black beans, rinsed and drained
12 - 1 cup cherry tomatoes, halved
13 - 1 avocado, sliced
14 - ½ red onion, thinly sliced
15 - Fresh cilantro, chopped, for garnish
16 - Lime wedges, for serving

17 - ½ cup Greek yogurt or sour cream
18 - 1 tablespoon fresh lime juice

# Steps to Cook:

01 - Set the oven to 400°F and line a baking sheet with parchment paper.
02 - In a small bowl, whisk together olive oil, honey, minced chipotle peppers, lime juice, garlic, smoked paprika, salt, and black pepper until fully combined.
03 - Brush each salmon fillet generously with the prepared glaze, reserving some for later. Arrange fillets on the lined baking sheet and bake for 12 to 15 minutes until cooked through and slightly caramelized.
04 - While salmon bakes, combine Greek yogurt or sour cream with lime juice, honey, and chipotle powder in a small bowl. Stir until smooth and set aside.
