# Steps to Cook:

01 - Set the oven to 400°F (200°C) to begin preheating.
02 - Wash sweet potatoes thoroughly and place them on a baking sheet lined with parchment paper.
03 - Roast the sweet potatoes in the preheated oven for 40–45 minutes or until the flesh is tender when pierced with a fork.
04 - Heat olive oil in a large skillet over medium heat. Add chopped garlic and sauté until fragrant, about 30 seconds. Stir in the chickpeas and cumin, cooking for 2–3 minutes. Add spinach, cooking until just wilted. Season with salt and black pepper.
05 - Once sweet potatoes are cooked and cool enough to handle, slice each lengthwise and gently fluff the insides with a fork. Spoon the chickpea and spinach mixture evenly over each sweet potato.
06 - Return the stuffed sweet potatoes to the oven. Bake for an additional 5–10 minutes to heat through.
