Heat a skillet over medium heat. Add ground beef and cook, breaking it up, until fully browned. Season with salt and pepper. Drain excess fat.

In a large mixing bowl, gently crush tater tots and combine with cooked ground beef, shredded cheddar, and Monterey Jack cheese. Mix thoroughly until evenly distributed.

Warm each flour tortilla in a dry skillet or microwave for 10–15 seconds to make them pliable.

Spoon a generous portion of filling onto the center of each tortilla. Drizzle with chipotle sauce and add a dollop of sour cream.

Fold in the sides of each tortilla, then roll up tightly from the bottom to enclose the filling. Place burritos seam-side down in a baking dish, sprinkle with additional cheese, and bake until cheese is melted and bubbly.

Remove from oven. Garnish with diced tomatoes, chopped green onions, and cilantro as desired. Serve hot with additional sour cream and chipotle sauce on the side.
