Nest a smaller onion ring inside a larger one and fill the gap with sliced mozzarella. Secure with toothpicks.

In a bowl, mix flour, baking powder, and salt. Dredge the filled onion rings in the dry mix and place on a wire rack.

Whisk together milk and beaten egg. Add this to the remaining dry mix to form a smooth batter.

Dip dredged rings into batter, letting excess drip off. Roll in Panko breadcrumbs and return to wire rack.

Heat oil in a deep pot. Fry coated rings until golden brown on both sides, turning once. Drain on paper towels.
