01 - 1 lb ground beef

09 - 0.25 cup water or beef broth

10 - 2 medium russet potatoes, peeled and diced small
11 - 2 tablespoons vegetable oil
12 - Salt and black pepper, to taste
13 - 0.5 teaspoon paprika or taco seasoning (optional)

→ Assembly

14 - 6 to 8 large flour tortillas (burrito size)
15 - 1.5 cups shredded cheddar or Mexican blend cheese

# Steps to Cook:

01 - Heat vegetable oil in a large skillet over medium-high heat. Add the diced potatoes in a single layer. Season with salt, black pepper, and paprika or taco seasoning if using. Cook for 10 to 15 minutes, stirring occasionally, until potatoes are golden brown and crispy. Remove from skillet and set aside.
02 - In the same skillet, cook ground beef over medium heat until browned. Drain excess fat. Stir in chili powder, ground cumin, garlic powder, onion powder, salt, black pepper, smoked paprika if using, and water or beef broth. Simmer for 3 to 5 minutes until mixture is slightly saucy.
03 - Warm tortillas slightly to make them flexible. On each tortilla, layer a scoop of cooked potatoes, followed by a portion of seasoned beef mixture, and a generous amount of shredded cheese. Add any desired optional toppings such as sour cream, salsa, hot sauce, green onions, or jalapeños. Fold in the sides and roll the tortilla tightly to enclose the filling.
04 - Heat a skillet over medium heat. Place burritos seam-side down and cook for 2 to 3 minutes on each side until golden and crisp. Remove and serve immediately.
